How To Make Creamy & Thick Vegan Yogurt | Peanut Curd Recipe

Ingredients (4-5 servings)

  • 1 cup peanuts
  • 2 cups of water
  • 5-7 green chilly tops OR 2 capsules of vegan lactobacillus OR 3-4 tbsp curd starter

Cooking Instructions:

  1. Soak peanuts in water overnight.
  2. Drain the water and transfer soaked peanuts to a mixer jar.
  3. Add 1.5 cups of water and blend.
  4. Add the remaining water and blend again to a smooth paste.
  5. Pass this mixture through a strainer/straining bag.
  6. Heat the peanut milk on low flame, bringing it to a boil while stirring constantly to prevent sticking.
  7. Turn off the heat.
  8. Allow the milk to cool until lukewarm.
  9. Add 5 to 7 green chilly crowns to the peanut milk.
  10. Cover the pot and set aside for 10 to 12 hours. In summers, the curd sets early, whereas it takes longer in winter. Store in the refrigerator after it's set.
