- 1 cup peanuts
- 2 cups of water
- 5-7 green chilly tops OR 2 capsules of vegan lactobacillus OR 3-4 tbsp curd starter
- Soak peanuts in water overnight.
- Drain the water and transfer soaked peanuts to a mixer jar.
- Add 1.5 cups of water and blend.
- Add the remaining water and blend again to a smooth paste.
- Pass this mixture through a strainer/straining bag.
- Heat the peanut milk on low flame, bringing it to a boil while stirring constantly to prevent sticking.
- Turn off the heat.
- Allow the milk to cool until lukewarm.
- Add 5 to 7 green chilly crowns to the peanut milk.
- Cover the pot and set aside for 10 to 12 hours. In summers, the curd sets early, whereas it takes longer in winter. Store in the refrigerator after it's set.
